Octopus with mixed pickled vegetables

Ingredients:


1 Medium size octopus
Coelsanus Mixed Pickles Vegetables
Extra Virgin Olive Oil

Method:


Bring a pan of water to the boil and add the octopus. Cover, bring back to the boil, then reduce the heat to minimum. Leave covered and cook for 40 minutes. When this time has elapsed, remove the octopus from the pan with a pair of kitchen tongs and insert a fork at the base of the tentacles. It is cooked if the fork is able to enter softly. When cooked, remove from the heat and leave the octopus in the water for 10 minutes, then place it on a chopping board. Cut the octopus into cubes and add it to the drained Coelsanus Mixed Pickled Vegetables.
